Learn by growing. In recent years the New York wine and grape industry has seen explosive growth. Our Viticulture program perfects the art of grape growing. The program includes instruction in grapes and wines of the world, grape production, plant biology, chemistry, food science and safety, soil science, pest management, and marketing and business management.

Students will have the most unique of experiences getting real-life, hands-on knowledge at vineyards on the Niagara Wine Trail as well as in a wine boutique at the Niagara Falls Culinary Institute.

Distillery Operations

Learn by distilling. The Associate in Applied Science Distillery Operations degree program is designed for students who plan a career in the craft beverage industry. This degree program will offer students the opportunity to explore management of a labor-intensive industry that will incorporate the science of growing grains and making alcohol.

Students will be work at local distilleries learning to select quality ingredients, fermentation procedures, and produce a variety on beverage styles.

Learn by making. There is a national demand for skilled "cellar masters" in the industry. Through our Enology program students will make wine, track fermentation, make various chemical measurements and provide finished wine to the instructor for evaluation at the conclusion of the course.

Students in the program perfect their wine making skills with instruction at award winning wineries along the Niagara Wine Trail.
